There’s just something about the end of summer that has me thinking about all the beach time I missed out on this year. I should have gone to Hawaii by now, but I’ll settle for eating delicious Hawaiian flavors instead. This recipe involves two of my most favorite things: a sweet and thick barbecue sauce, and yummy pineapples. Together with the rest of the ingredients, this recipe becomes a tangy and sweet mashup that is perfect on chicken when you’re craving something different. Toss this over rice for a healthy meal that everyone will love, or add more zucchini to the mix for a Paleo-friendly take on a new week night dinner.

What I love most about this recipe is that the ingredient list is short and simple. Just a few pantry staples plus some pineapple and chicken, and you’re all set to go! And the cleanup is non existent since you’re cooking it all in a foil packet. Once you’re done, just toss the packets and you don’t have to worry about a ton of dishes.
