Ingredients
Dough
¼ cup non-fat dry milk powder
1 tbsp sugar
2 ¼ tsp rapid rise yeast
½ tsp salt
1 1/3 cups warm water
2 tbsp olive oil
4 cups bread flour
Seasoning
2 tbsp grated parmesan cheese
1 tbsp onion powder
1 tbsp dried oregano
1 ¾ tsp garlic powder
1 ½ tsp dried basil
½ tsp salt
12 tbsp unsalted butter melted and divided
Instructions
To make the dough place the dry milk powder, sugar, yeast and salt in the bowl of a stand mixer with the dough hook on. Add the water and mix well. Allow to sit until mixture bubbles (2 to 5 minutes). Add the oil and stir again.
Gradually add the flour on low speed until dough begins to form. Increase speed to medium low and knead until dough becomes soft and slightly tacky and it no longer sticks to the sides of the bowl but stays together. Turn dough onto lightly floured surface and divide in half.
Coat bottom of two 9×13 pans with 4tbsp each melted butter. Roll each half of dough into a rectangle to fit into the bottom of each pan. Brush tops of dough with 1tbsp melted butter each. Wrap each pan with plastic wrap and let sit in a warm area for 90 minutes or until puffed up and doubled in size.
Score each pan of dough into 10 breadsticks (so they’re over an inch thick). Bake in a 475 degree oven for 10 to 15 minutes (until golden brown).
Prepare seasoning mix while baking by stirring all ingredients except butter together.
When you take breadsticks out of the oven immediately brush each pan with remaining 1tbsp melted butter and then sprinkle with seasoning mix.
Let cool 5-10 minutes. Then remove from pan and cut along scored lines. Serve plain or with marinara sauce for dipping.
