These Super Food Muffins Are One Of My Favorite Things To Eat!

Did You Know This Fruit Is Actually Very Good For Your Body?

Blueberries are an amazing berry, but I haven’t always felt this way about them. As a matter of fact, I can remember a time when I avoided blueberries at all cost! They could get sticky; and, if you drop them, they roll all over the place, never to be seen again!

I think I must have been traumatized by some strange, blueberry incident as a child. It must have been another 20 years before I saw the light. The fresher the blueberries, the better your muffins will taste (or any other blueberry food, for that matter).

I am a firm believer in eating local produce that is in season. If you’ve ever eaten a strawberry in the middle of winter, you have to wonder what that strawberry has been through, right? But blueberries are a fruit I could now eat during any time of the year because they taste so good. Blueberries with Greek yogurt, blueberries and strawberries with cottage cheese, or just a bunch of blueberries mixed with some peaches – it all tastes good!

Blueberries also happen to be a “super food”. They’re rich in antioxidants, which is important for promoting a healthy digestive system and to help you feel your best during the day. I don’t know how I survived without blueberries before now!

Quick Tip: Freeze your blueberries before mixing them into the batter to avoid them breaking and bleeding.
