You Won’t Believe How Good Your Mornings Just Got

I love starting my day off with a healthy filling breakfast. It can be difficult to find a recipe that is both satisfying and healthy. I know if I reach to quickly for the bagel or muffin I’ll crash mid morning or if I make a quick run through the drive through window I’ll regret whatever greasy choice they hand me.

I have friends who opt for salads for breakfast but I have yet been able to abandon my love for a warm filling plate of comfort in the morning. I like breakfast to be breakfast. In fact I’m more likely to eat breakfast for dinner then I am to eat salad at 7am.

I love a good smoothie but tend to go heavy on the fruits instead of the kale. And to be honest I sometimes just need something to sink my fork into.

This bowl of roasted veggies topped with siracha and fried eggs was the perfect way to start off healthy and satisfied! It fills me up and I don’t have a mid morning crash. I love the eggs sunny side up where the yolk mixes with the siracha sauce and coats the veggies.

Quick tip: Cut up your vegetables and season the night before for a faster start to your day. Make sure to cut your vegetables evenly for a better cook. To many varying sizes will leave you with a mix of overcooked and raw veggies.
