What’s Quick, Easy and Bursting with Flavor?
The next time your family or friends gather for a potluck lunch or dinner, surprise them with this reinvention of the old tried-and-true potluck staple: pasta salad. This fresh, new combination is a real crowd-pleaser. Those who have never tried avocado, or who think they don’t like avocado, will have their socks knocked off by this simple, yet satisfying, dish.
This uniquely flavorful pasta salad uses avocado not only as an ingredient in the salad itself, but also as an ingredient in the salad’s dressing. The velvety texture of avocados give them a rich and luscious mouthfeel that combines well with the other salad ingredients, without overshadowing them. Everything is nicely-proportioned to give you a full mx of all of the ingredients in every scrumptious bite.
But it is really in the dressing where avocado becomes the star of the show. It combines with buttermilk and bright lime to create a dressing that is so rich and creamy, you will find yourself craving this pasta salad. That could actually turn out to be a very good thing, as avocados are chock-full of cholesterol-lowering monounsaturated fat. I am SO glad that Holly came up with this fabulous recipe – it is going to be one of my go-to summer salads!

Quick Tip: Want to magically transform this side dish into a main course? Just add a serving of protein, such as grilled chicken (or you could chop up some rotisserie chicken, keeping your kitchen cool), steak strips or chunks of salmon.
