One of my all time favorite pasta recipes originates from my great grandmother. My own moth used to make this Spicy Pasta for me ever since I was a kid. Since I’ve had the recipe myself, I’ve changed a couple little things here and there, but that classic, spicy red sauce remains true.
I think the spice level is perfect too. The heat isn’t too strong for my kids to handle, but you can always tone down the heat if you really need to. Serve this dish with penne, spaghetti, fettucini, or bow tie pasta. Whatever suits your mood!
Ingredients:
250 grams Pasta , penne
1 Onion , chopped
1 Tomato , chopped
4 Homemade tomato puree
8 cloves Garlic , roughly chopped
1 Green Chilli
1 tablespoon Red Chilli flakes
1/2 tablespoon Black pepper powder
1-1/2 tablespoon Dried oregano
1 tablespoon Red Chilli sauce (Sichuan Sauce)
1 tablespoon Roasted tomato pasta sauce
1 tablespoon Soy sauce
1/2 tablespoon Vinegar
2 tablespoon Cheese spread
Salt , to taste
Instructions:
To start preparing Spicy Pasta in Red Sauce, boil the pasta in a deep pan/kadai, drain the excess water and keep it aside.
In another pan/kadai, add oil and garlic and green chilli. Sauté it for 2 minutes.
Add chopped onions, sauté for 3 minutes, until soft.
Add chopped Tomatoes and cook till they are done.
Now add tomato puree, tomato sauce, chilli sauce, vinegar, soy sauce, chilli flakes, black pepper, oregano and salt to taste.
Cook together for a few Minutes till the aroma comes together.
Add Penne Pasta and keep mixing till the sauce thickens and pasta is well coated.
Add cheese spread (you can also use grated processed cheese).
Cook for about 2 minutes. Serve Penne Pasta immediately with some extra cheese for garnish.
Serve Penne Pasta along with Pizza Margherita and a glass of wine for your weekend night dinner.

Quick Tip: If you don’t like spicy, omit the red chili flakes to turn the heat down.
