Although this image didn’t immediately spring to mind when I thought of the term “candied apple,” these will now and forever be etched in my mind as just exactly that: little candied apple slices. The fact of the matter is, I think I would prefer them to the regular, caramel-coated candy apple. They certainly would be much easier to eat!
The ease of preparation also factored in to me adding these to my recipe collection. I mean, 5 ingredients and a microwave?! I also find them very appealing, visually. But it is the taste that was key to winning me over. One of my favorites is turtle candy (turtle anything, really!). These are turtles, with a nod to health!
INGREDIENTS
2 very large Fuji apples
3½ cups semi-sweet chocolate chips (I used Nestle)
1 tablespoon coconut oil
1 cup caramels, melted (I used Kraft caramels)
Chopped pecans
Popsicle sticks
INSTRUCTIONS
Slice apples into ½-inch thick slices. With a knife make a little slit in the bottom of each apple slice to make it easier to insert a Popsicle stick.
Melt chips in the microwave on high for about 2 minutes.* Stir in coconut oil until smooth. Dip apple slices in chocolate and place on parchment lined cookie sheet.
Place caramels in microwave safe bowl and microwave on high for 45-60 seconds.* Do NOT overheat. Stir until smooth. Drizzle melted caramel over chocolate and sprinkle with nuts.
Refrigerate for about 1 hour. Serve and enjoy immediately. Apples are best the first day. Store in refrigerator.

Quick Tip: If you don’t have access to Popsicle sticks, they are not really necessary to the success of this recipe. Just serve the apple slices on their own, and cut your prep time significantly, as you won’t have to cut the little slits and insert the sticks. That may not seem like such a big deal, if you are only making a few of these. But what if you were making dozens for a party?
