The Perfect Way to Celebrate St. Patrick’s Day with a Sweet Muffin Recipe

I love the holidays. I don’t just mean the winter holidays, but all holidays. They are an excuse to do something different from the norm, and who can resist that? I adore making special treats, decorating, dressing up, or following whatever other traditions there are for that day. One of my favorites is St. Patty’s Day. Just because I’m not Irish doesn’t mean I can’t get into the spirit! My family knows to expect green food and traditional Irish dinners on that day, and here’s one fun recipe that I’ve made for breakfast more than once. Green muffins that are festive, sweet, and surprisingly healthy have won my family over.

This muffin’s big secret is that it includes a ton of healthy spinach in the wet ingredient puree. But don’t worry – you’ll never taste it! The bananas and cinnamon turn this muffin into a delicious breakfast treat. Sneak some veggies into their meal and let them think you’re just celebrating the holiday.
