My favorite tradition for New Year’s Eve is to end the year with a bang. If my resolution for the new year is going to be to eat healthier, I better enjoy the last few days of December!
That’s why I love getting Chinese takeout and pigging out on a big bowl of noodles. When I really need to satisfy a craving though, I like to make my copycat Asian Noodle recipe.
I love wrapping myself up in a blanket, popping a movie on the T.V., and slurping down a bowl of these noodles. A little crunch from the cabbage and carrots is exactly what this dish needs too. Mm!
Ingredients:
Pasta – 2 cups
Oil – 3 tblsp
Garlic – 5 cloves chopped
Onion – 1 large chopped finely
Carrot – 1 chopped finely
Cabbage – 2 cups sliced thinly
Soy Sauce as needed
Salt to taste
Sugar – 1 tsp
Vinegar as needed
Black Pepper powder to taste
Chilli flakes to taste
Instructions:
Cook pasta in salted boiling water as per package directions. Drain and set aside.
Heat oil in a pan, add in garlic, onions and saute till golden.
Add in cabbage and carrots and mix well. Cook till it is done.
Add in salt, sugar, soy sauce and mix well.
Add in pasta and toss well.
Add in vinegar and stir fry for 2 to 3 mins.
Add in black pepper and red chilli flakes. Mix well.
Serve.

Quick Tip: Use brown sugar for a richer taste instead of white sugar.
