Okay, I can’t be the only one who does this: around New Year’s Eve, do you ever load up on Chinese takeout? Of course, nearly everyone’s New Year’s resolution is to lose some weight, cut down on calories, or eat healthier in general, right?

I always do the same thing, so at the end of the year I always go out with a bang. That’s probably not the smartest idea, but I always say “go big or go home!” I made this copycat Asian Noodle recipe that I think tends to taste better than a lot of the Chinese takeout you can get at a lot of generic places.

Of course, I’d never diss truly authentic Chinese takeout, but this copycat noodle recipe sure does satisfy a craving when I’m really in need of some salty, slurpy noodles! Plus, with a handful of cabbage and carrots thrown into the pot, I can still consider this a healthy meal, right? Haha!

If you don’t do my New Year’s Eve tradition, I highly suggest you give it a shot anyways. Imagine: a cold afternoon, a cozy blanket and robe, and a big bowl of pasta coated in soy sauce. Nothing beats the savory, garlicky, and slighty spicy taste of these Asian Noodles.
