Put A Mexican Twist On Stuffed Peppers In This Tasty Recipe!

I’ve been asked about a recipe for stuffed bell peppers a lot, given my Eastern European heritage so I thought it was high time to share one. However, there’s a twist here that I don’t think everyone was expecting!

This recipe I’m sharing today is one of my favorite ways to make stuffed peppers. They’re totally delicious, and they’re stuffed with all kinds of good things; beef, Mexican rice, enchilada sauce, cheese… See, I told you there was a twist!

These are Mexican style stuffed peppers. But I think the best thing about them is that they’re baked in the crock pot!

These Mexican stuffed peppers are melt in your mouth good! I served ours with just a simple side of cooked vegetables, and it was one of the best dinners I’ve had in a while! Not to mention, stuffed peppers are actually quite healthy for you, even with all that cheese involved!

They’re certainly amazing as is, or you could customize your own by using chicken instead of beef. You could even exclude the meat and add more veggies/rice for a vegetarian version.  I think any way you make them, you will love this recipe as much as me and my family do!

Quick Tip: Use beef broth instead of water to intensify the flavor in the slow cooker.
