A Simple, Sweet Potato Casserole For Two

Are You Team Pecan Or Team Marshmallow

Sweet Potato Casserole is my favorite Thanksgiving side. Growing up a fight often ensued over toppings. Soon we had two every year, one smothered in marshmallows and another covered in pecans. I always grabbed a large helping of each. Our table was spread with traditional recipes passed down over the years and a few new ones from the uncles who had married into this close knit family.

The turkey was the only thing that seemed to change. Some years it was deep fried, some years smothered in coca-cola, other times it was packed full of vegetables and sausage. It was never the same and the only dish the uncles were allowed to touch. My favorite to this day was when it was smoked in a convection smoker with applewood hickory wood chips. We recently bought our own convection smoker in the hopes of recreating this moist flavorful turkey this year.

Our table was filled with two different sweet potato casseroles, grandma’s cranberry stuffing, yeast rolls, green bean casserolle, macaroni salad, fresh cranberries, 7 layer salad, and fruit salad. The dessert table overflowed with more pies then we could finish over the course of the next three days. And it was wonderful.

Quick tip: This recipe is easy to adapt. Leave off the marshmallows and increase the pecans, or do the opposite.
