Not Quite A Casserole, And Not Quite A Baked Potato, But Something New!
Although some would call this recipe a loaded mashed potato or twice baked potato casserole, in my house, we prefer to grace this dish with the name: “Double Loaded Baked Potato Pie”. I know, the name sounds pretty extravagant, but this I literally one of the best side dishes I’ve ever made for dinner, and an amazing recipe deserves an equally amazing name.
Okay, so this really isn’t a pie, per say. Or, at least, this is not like a traditional pie. This recipe doesn’t get baked in a pie plate, you don’t cut it into slices, and it doesn’t have a crust and/or a filling; BUT, it still tastes delicious and gets the thumbs up from all of my family members!
This is the perfect and filling side dish to some of our favorite dinners – roasted chicken, Italian sausages, meatloaf – whatever you can think of. We’ve had it for special occasions, when people have been over; and, without fail, they always ask for the recipe – because it’s creamy, flavorful, and who doesn’t love the cheese & bacon on top!?
I promise, after trying this recipe, you’ll never want to have a regular baked potato ever again. In fact, that goes for all pies too!
