Frightful For Your Eyes, Tasty For Your Tummy

Here it is, nearly Halloween again. Seems like the years are going by faster and faster….or is that just me? This year, I’ve decided that I would like to host a small dinner party with a Halloween theme for just a few of my closest friends. Because the gathering will be small, I would like to have a sit-down dinner, instead of the usual buffet. But I confess that I am stumped for ideas on what to serve as a main course.

This is where Jonny’s tasty recipe for a grown-up individual chicken pot pies, decked out in macabre jack-o’-lantern faces has come to my rescue. This isn’t the chicken pot pie you may be remembering from your childhood. You know, the one with chicken, peas and carrots swimming in gravy. That would hardly be suitable for the party I am planning.

This chicken pot pie is an elegant and sophisticated concoction of chicken, onion, and sweet potatoes, sauced with white wine, seasoned with nutmeg and parsley and topped with buttery, flaky puff pastry. Only grown-up kids deserve such a treat on Halloween! I can only imagine the looks on the faces of my friends when they are served their individual ramekins and are greeted by the distorted, grinning jack-o’-lantern faces etched in puff pastry!

Quick Tip:  Although the recipe doesn’t specify exactly what to do with the rotisserie chicken (I am making the assumption that you would not add it, whole, to the veggies), I am going to go out on a limb and suggest that you shred and chop it, or cut it into bite-sized pieces, considering it will be served in small ramekins.
