With all of our carb-counting craziness and obsession with having waif-thin bodies, the humble potato has fallen out of favor. People feel somewhat guilty if they are caught out eating potatoes, collecting potato recipes or extolling the virtues of potatoes in public forums. Balderdash!
Potatoes, like anything else that you consume or subject your body to over the course of your lifetime, are fine if eaten in moderation. I have never even heard of an all-potato diet, so it shouldn’t be too difficult to limit your potato indulgences. Besides, (SPOILER ALERT!) none of us are getting out of here alive, so pick your poison and enjoy your life. If you like potatoes, eat them!

Quick Tip: Make sure that you thoroughly wash your potatoes, using a veggie brush. This not only removes any chemicals and fertilizers that might have been used to grown them, but it also cleans dirt from the skin. Since you will be eating the skins of these potatoes, you want them as clean as possible. No veggie brush? I toothbrush works in a pinch!
