Quick Tip:  Are you afraid this will be too spicy for you, when it comes time to eat this tasty dish? No problem, here’s how you can take out the heat while keeping all of the great flavors:  First, try using a regular green bell pepper in place of the jalapeno. Reduce the amount of cayenne pepper and red pepper, or omit them entirely. Or you could use a regular smoked sausage in place of the andouille sausage.
