Maximize The Taste While You Minimize The Effort With This One-Pot Meal

Now this is a soup with a lot going for it! The first thing you will notice is the visual appeal of bright corn and tomatoes. Then you’ll note the crazy, random patterns of the chopped and shredded chicken. But it is the creamy texture that will capture and hold your attention, especially since there is no heavy cream in this soup anywhere to be found. Hmmm…how did they do that?

Soup is one of my favorite things in the world to eat. Jen is a woman after my own heart and one of my favorite food bloggers. She always has insanely delicious and easy to make comfort food. This soup is a fine example of how she selects and blends her ingredients to get just the right amount of zesty flavor.

The ingredients are not exotic or expensive, and you probably have most of them in your fridge, on your pantry shelves or in your spice rack right this minute. That means that you can make this soup any time that you feel the need to escape your hum-drum life. The taste of this soup will have you hearing a mariachi band in the back of your mind, and you will instantly be transported to sunny Mexico. Pass the tequila!

Quick Tip:  When working with jalapenos, or any hot pepper, it is best to wear rubber gloves. It is the seeds and the ribs that contain the “heat” of the pepper, so unless you like your spice level extreme, it is best to remove most, or all, of these. After you are done processing the peppers, wash your gloved hands in hot soapy water to remove the hot pepper oils from the outside of the gloves. Then wash your bare hands in hot soapy water, just to be safe. Avoid touching your eyes or other sensitive skin with your hands, just as a precaution.
