No Need to Take a Road Trip to Enjoy This Southern Delight

This Pecan Bread is perfect for a crowd! Each recipe serves up to 16, so make a double batch for a fantastic and easy holiday breakfast treat. It’s also the perfect way to please a crowd for a potluck or company picnic. Have a friend or family member that isn’t big on sweets? This bread is just nutty enough to please for a birthday surprise. I’ve also found that it’s great for freezing, so I can easily enjoy one of my new favorite breakfasts or desserts any time I like. Ingredients:

2 cups pecans, finely chopped

1 ½ cups self-rising flour

1 cup sugar

1 cup brown sugar

1 cup vegetable oil

4 large eggs, beaten

1 teaspoon vanilla extract

¼ teaspoon salt

 

Instructions:

Preheat oven to 350 F and lightly grease a 9×13 inch baking dish with butter or non-stick spray.

In a large bowl, use a wooden spoon to stir together sugars, eggs, and oil, until fully incorporated.

Stir in flour and salt until incorporated, then mix in vanilla and fold in pecans.

Pour batter into greased baking dish, then bake for 30-35 minutes, or until toothpick inserted in center comes out mostly clean.

Let cool at least 15 minutes before slicing and serving.
