This coleslaw has a creamy, tangy and spicy flavor that comes from mayo, sour cream, lime juice and taco seasoning. This is a flavor combination that your family will love. As a bonus, you have healthy veggies included, but they will be tasting so good that even your usually picky eaters will devour them and probably come back for more.
This would be a great dish to serve at a buffet party or any social gathering where you are asked to bring a dish to share, as long as it was not in the heat of the outdoors. If you do want to take it on a picnic or other similar outing, just make sure to keep it in a cooler, and serve people from there.
INGREDIENTS
1 (14 oz.) bag coleslaw mix
½ c. red pepper, diced
½ c. black beans, rinsed and drained
½ c. grilled corn
½ c. minced cilantro
1 jalapeno, seeds removed and finely diced
¾ c. mayo
¼ c. sour cream
½ package taco seasoning (about 1 tablespoon)
2 Tbsp. lime juice
DIRECTIONS
In a large mixing bowl, combine coleslaw mix, red pepper, black beans, grilled corn, cilantro, and jalapeño.
In a separate small bowl, combine mayo, sour cream, taco seasoning, and lime juice.
Add mayo mixture to coleslaw mixture and stir to combine.

Quick Tip: You can make this recipe with broccoli slaw, for an added pop of color. Or you could mix the slaws half-and-half. Adding red onion would also enhance the visual appeal and flavor of this dish.
