Kids LOVE These Adorable Mini Meatloaves! (And Adults Can’t Get Enough Either)

Honestly, who could resist one of these muffin tin meatloaves for dinner? I know I can’t! There’s just something about food that’s small that is just so darn cute—and so much more fun than “regular sized” foods! But beyond their fun individual portion sizes this mini meatloaf recipe is just plain delicious!

Onion, garlic, ketchup and seasonings take humble ground beef and transform it into a superbly tasty dish that your whole family will love. The meat stays tender and juicy and the additional flavors mingle together to create a meat loaf party for your taste buds. This recipe is a keeper!

 

Ingredients

1 tsp olive oil

1 small onion finely chopped

1 tsp dried oregano

2 minced garlic cloves

1 cup ketchup divided

1 ½ pounds lean ground beef

1 cup finely crushed saltine crackers

2 tbsp yellow mustard

1 tsp Worcestershire sauce

¼ tsp pepper

2 eggs

Instructions

Preheat oven to 350 and spray muffin tin with cooking spray.

Heat olive oil in a large skillet over medium high heat. Add the onion, oregano and garlic and sauté for 2 to 3 minutes. Let cool.

Combine onion mixture, ½ cup ketchup, and remaining ingredients in a large bowl until well combined (hands work best for this).

Spoon the meat loaf mixture evenly into the 12 muffin cups. Top each with 2 tsp of ketchup. Bake for 25 minutes or until meat temperature reaches 160 degrees. Let stand 5 minutes before serving.

Quick tip: Instead of ketchup use barbecue sauce for barbecue meatloaf. Top each meatloaf with barbecue sauce and shredded cheddar.
