These Meatballs Make The Best Soup You Ever Tasted!

One-Pot Wonder Straight From My Italian Granny’s Kitchen!

There is something to be said for a recipe that you can pull together with a handful or two of basic ingredients and put on your table at warp speed. But all that haste is wasted if whatever you end up serving doesn’t live up to your taste expectations. This recipe from Erin has it all – amazing taste, zero-to-30-minute shelf-to-table speed AND it is made using only one pot! How’s that for the best recipe ever?

This recipe is unique in many respects. First, when was the last time you had meatball soup? Most people have never heard of it, outside Italian family circles. Second, you don’t even have to fuss with making those main-ingredient meatballs – pick up a bag of frozen meatballs and keep them on hand for those “Oops, I forgot to plan,” emergency weeknight dinners. Yes, that’s right – even with frozen meatballs, you’ll be eating this soup in 30 minutes!

What a great concept – a home-cooked meal in under 30 minutes. All it takes is a little convenience food and a few custom touches, and for all intents and purposes, you planned this meal out to the very last breadcrumb. Nobody is going to be able to tell the difference, so you can keep it as your little secret – or share it with your closest friends.

Quick Tip:  Never heard of ditalini pasta? It is made in the shape of tiny little tubes of macaroni. Don’t worry if you cannot find it at your local market, just use any small pasta. Don’t have time to run out to the store for pasta? Just break up spaghetti noodles. It’s all good!
