Your Taste Buds Will Be Singing La Cucaracha!
I don’t know about you, but I loved Jalapeno Poppers when they first started showing up as an appetizer at my favorite restaurants and bars. I will still order them today, if I see them on the menu. There is something about the spiciness of the jalapenos that contrasts with the coolness of the sour cream and cream cheese and makes my taste buds sing.
Now, with Alea’s recipe, you can have all the taste of the original appetizer, but without all the work of stuffing those individual jalapeno peppers. Plus, with the addition of a layer of crispy tater tots, this casserole is now a hearty meal. You could serve this on the day of your Big Game, as an appetizer. Or it could be a dish you take to your next potluck.
Don’t worry about this dish being too hot for the taste of your average guest. As long as you do a good job of removing the seeds from your jalapenos, all you will get is the flavor of the jalapenos, not the heat. Dice them very small, so that nobody gets a huge hunk of jalapeno when they take a bite, and make sure you mix your ingredients thoroughly. The sour cream and cream cheese will act to temper the heat of the jalapenos, as well.

Quick Tip: If you want your tater tots to be extra crispy, spray them with cooking oil spray after you arrange them in the casserole dish.
