Do you ever look at food magazines and wonder how they create such elegant looking meals? Surprisingly, the answer more often than not is “less is more”. I’ve found throughout my many years of experience that a long list of ingredients is not necessary to create dishes that really blow people away. One of the keys is to rely on great ingredients to show off their own flavors. When I found this recipe at Epicurious, by user Ruth Cousineau, I knew that I had found something that hit all the right notes. Simple to make, delicious to eat, and only two ingredients to get this from an idea to on the table. Sounds like the perfect way to make dinner complete!

I think of roasted carrots as a fall dish. There’s something about the way that carrots become very sweet, almost caramelized, when roasted, that reminds me of the fall. However, don’t let me stop you from eating these all the time! They are so easy that it’s a great go-to for dressing up any meal at all.
