Give Me 20 Minutes And I’ll Give You Real Comfort Food

It seems like I am always running late. Oh, I know smarty-pants, I might be able to solve that problem if I got an earlier start, right? Well, yes and no. I can only control my part of the equation. Just me, my own body and my own actions and reactions. The rest of the Universe, it’s on its own. But I would be ever-so-grateful if it would move over and get out of my way sometimes!

On a typical weeknight, I might be stopping home just long enough to grab something I need for my next appointment or to change clothes to go out and meet some friends. But it would be nice if I could just take a breather and fix myself a decent meal instead of living on a diet of fast food and coffee. Danelle’s hearty casserole would fit that need just fine. For once I could sit down for half an hour and relax with some comfort food and just catch my breath.

This recipe couldn’t be much easier. It is called Spicy Smoked Sausage Alfredo Bake, but you really make it on the stovetop and then just broil it, so the long pole in the tent is the 8-10 minutes it will take your pasta to cook.

Quick Tip:  Pay close attention when you are doing the second step, where you add the flour. What you are doing is making a roux, which will be what thickens your sauce. After the flour cooks for just a few minutes, you need to add the liquids in the next steps very slowly, stirring to incorporate them into a smooth sauce before adding the next increment of liquid. This way, you can make your sauce the consistency you prefer.
