Mexican Food With All Of The Flavor, But None Of The Guilt!

Those of us who have a passion for Mexican food know that it can easily pack on a pound – or 10! – in the blink of an eye. It tends to be high in grain-based carbs, since everything is wrapped in, or served on or with tortillas. Those little rascally tortillas seem harmless enough.

There isn’t much substance to a tortilla, with them being so thin. It isn’t like they come with the obvious warning that a big chunk of bread gives you about its intent to weigh heavily in your stomach. But looks can be very deceiving, can’t they? Think for a minute about how many tortillas you might consume in a typical Mexican meal out at your favorite restaurant.

First, they bring you the obligatory basket of tortilla chips. You are talking with friends and waiting to be served, so you munch away on those chips with wild abandon, consuming the equivalent of 2-3 slices of bread. Say you order a taco meal. Those three tacos you eat are three more slices of bread. Dessert? Two or three more tortillas filled with sweetened cream and dusted with sugar. That is nine slices of bread you have just consumed in one meal! There is hope, however, in this great new recipe from Olivia.

Quick Tip:  Don’t think you can manage the rolling-up of the zucchini slices into the enchilada shape? You can still enjoy the same great taste, just turn the recipe into a layered casserole, alternating the filling with layers of thinly-sliced zucchini or yellow squash and bake per recipe instructions.
