I like to find appetizers that are able to be prepared in advance of my party. This means I will have less stress on party day, as I am running around attending to last minute details before my guests arrive. These roll-ups can be prepared in advance and sliced minutes before the party. They can even be frozen!
The other thing I look for in an appetizer is ease of preparation. I want to focus the bulk of my attention on preparing a satisfying and filling entrée and a memorable dessert. My appetizers have to be something that I can prepare in mere minutes, such as these roll-ups.
INGREDIENTS
2 cup cooked, shredded chicken
8 ounces light cream cheese, softened
½ cup Buffalo wings sauce
¼ cup blue cheese, crumbled
1 cup cheddar cheese, shredded
2 tablespoons sour cream
4 (8-inch) medium flour tortillas
2-3 green onions, thinly sliced
INSTRUCTIONS
In a mixing bowl combine the blue cheese, cream cheese, sour cream and cheddar cheese.
Toss in chicken along with ½ cup Buffalo wings sauce. Mix to combine well.
Lay a tortilla out on a plate and spread an even, thin layer of the chicken and cheese mixture all the way to the edges (about 2 to 3Tbsp). Smaller or larger tortillas may be used, however you will need to adjust the amount of chicken and cheese mixture you add to each tortilla. Make sure your tortillas are at room temperature before you roll them so they are nice and flexible. Roll up tortilla tightly and place on a plate and then repeat until all the ingredients have been used.
Pop tortillas into the fridge to chill for 2 hours. If time is an issue, you can skip the refrigeration before slicing or refrigerate for less time. However, for best results, refrigeration is recommended.
Slice each rolled and chilled tortilla into rounds and garnish with sliced green onion, if desired.
