This Fun New Way to Eat Tacos Will Become A Family Favorite

Yes, your eyes are seeing correctly. These are my husband’s epic Taco Egg Rolls! Who knew that an egg roll wrapper was the perfect vessel for more than just traditional Asian fillings? Honestly, it’s like a whole new culinary world has opened to me. All it took to get these ridiculously yummy rolls together was some store bought egg roll wrappers, taco seasoned ground beef, and our favorite taco fixings.

Tuck everything into the wrapper and fry them up for one epically crunchy and tasty taco bite! My youngest could not stop raving about them throughout the whole meal and we easily scarfed down the batch. Try these tonight!

 

Ingredients

1 pound ground beef

1/2 cup diced white or yellow onion

Taco Seasoning – homemade or 1 store bought packet

1 can Rotel Tomatoes

1 can Refried beans

1 package Egg Rolls Wrappers

Vegetable Oil

1 cup Sharp Cheddar Cheese or Mexican Blend

Avocado

Sour Cream

Salsa
Instructions

In a skillet, cook ground beef, onion and taco seasoning until beef is cooked through.

Add Rotel Tomatoes and mix well.

Add Refried Beans and mix well then set aside.

In a fryer or in a sauce pan, add 2 inches of oil. Heat oil until oil is hot and ready.

While oil is heating, make egg rolls.

Lay egg roll out flat. Add 2 Tablespoons of beef mixture to center of egg roll.

Top with 1 tablespoon of cheese.

Add optional avocado.

Seal and roll according to package directions.

Fry in oil until egg rolls are cooked and golden.

Serve with additional avocado, sour cream and salsa.

Quick tip: If frying foods isn’t your thing these can be baked in a 400 degree oven for about 15-20 minutes. Keep an eye on them so they don’t burn—when they’re golden brown and crispy they’re done.
