My English and Finnish family really sticks to their traditions around the holidays. This is probably because we all attend church like, well, religion! I however like to think it’s because we all like spending this special time together.
Our Christmas meals have always been the same: plenty of traditional English dishes abound. I love our Waldorf salad, and my mother puts a special twist on it. She replaces the mayonnaise with greek yogurt!
Plus, I think the red and green apples add a festive touch to the dinner table. You can serve this over a bed of lettuce or you can munch on it as is!
Ingredients:
1-8oz. container of fat-free lemon Greek yogurt
2 green apples (such as Granny Smith)
2 red apples
1-2 stalks of celery
1/3 cup candied walnuts
1/4 cup dried cranberries
Instructions:
Chop the apples, discarding seeds, and slice the celery into bite-size pieces.
Toss the apples, celery, dried cranberries, and walnuts with the Greek yogurt in a bowl.
Chill for one hour or more before serving
