You’ll Never Guess the Secret Ingredient in These Oatmeal Breakfast Cookies

I first had these cookies at a PTA bake sale in my son’s third grade class last year. Before the bake sale we sign up with what we will bring so there’s not too much overlap. We made chocolate fudge brownies, our neighbor made traditional chocolate chip cookies and the other parents had similar staples. The class mom made these delicious oatmeal cookies and they were the first to sell out.

She brought another batch the second day and I had to try them. They were delicious! The texture front the oatmeal and the slightly sweet flavor of the banana was perfect. She sold out agaian that Tuesday, so I knew I had to have that recipe, if not for my kids, myself!

She brought me the recipe the next day, along with another new batch of the favorite treats for the bake sale. I went home that afternoon and tested it out myself. It was so easy to make! They are sweet enough with the peanut butter to serve as dessert or an evening treat, but they have that oastmeal-like flavors that’s perfect for on-the-go breakfast. Forget chocolate chip cookies, these are the new favorite in our house!
