In the never ending hunt for “what’s for dinner”, I think it’s easy to forget that dinner consists of more than just the main dish. I know that I’ve often found myself standing in front of the freezer thinking “chicken or beef?”, only to later realize that I need to throw something together to go with it. Way too often it ends up being uninspired steamed vegetables – healthy, but not necessarily delicious or interesting. This recipe is a great one to keep on hand for nights like those. It tastes like it took hours, but you can get it on the table in just half an hour while you make your main dish. The roasted garlic trick in this one is really a win!
Pasta salad always makes me think of summer, because I grew up eating the cold variety. But this side dish is served warm, and with the creamy cheese sauce and the spinach and tomatoes, it could be a full meal on its own.
