I could eat this easy chicken parmigiana casserole recipe every day! I have a tendency to go through food phases. Do you ever go through those? I get absolutely obsessed with a certain flavor, texture or type of cuisine and just can’t get enough. My family isn’t a fan of this strange tendency—they get tired of these foods way before I do.

First, it was anything and everything Mexican food.  I couldn’t even tell you the number of packages of tortillas we went through during that phase. Then it was an obsession with hot sauce. And then (much to my husband’s chagrin) it was a vegetarian phase.

Now? Now it’s Italian. I’m pretty sure there isn’t a pasta dish out there I would turn down. And I’ve been on a roll trying new Ragu sauce recipes from simple and classic marina to Bolognese and wine sauces. But you know what? Those recipes all take a good bit of time to get just right. And sometimes I just don’t have enough of it.

That’s when I turn to dishes like this one to satisfy my cravings for Italian flavors but also to feed my ravenous family before  they all just go rogue on me and grab the first thing they see in the fridge.
