This easy blueberry cobbler is the most simple and delicious fruit cobbler you’ll eat! It’s bursting with warm blueberry filling that’s perfectly sweetened and given an extra boost of flavor from just a bit of lemon juice. Then the perfectly crisp yet soft and tender crust takes it right over the top from delicious to downright addicting.
And on top of it this recipe is a whole lot of fun. The crust starts out on the bottom of the berry filling but during baking rises to the top—just like kitchen magic. Serve this to your family and watch them gobble it up.
Ingredients
2 cups blueberries (fresh or frozen)
1 tbsp lemon juice (fresh or bottled)
1 ½ cups sugar, divided
½ cup butter (1 stick) cut into small cubes
1 cup flour
2 tsp baking powder
½ tsp salt
¾ whole milk or heavy cream
1 egg beaten
Instructions
In a saucepan combine berries, lemon juice and ½ cup sugar. Bring the mixture to a boil then remove from the heat and set aside. Place the butter in an 11×7 baking dish and melt in an oven preheated to 350 degrees.
In a mixing bowl combine the remaining 1 cup sugar with flour, baking powder, salt, milk and egg. Pour batter over melted butter.
Spoon the berry mixture over the batter and butter. Do not stir.
Bake at 350 degrees for 40 – 45 minutes or until golden brown. Allow to cool to close to room temperature and then serve.

Quick tip: This can be done with two cups of strawberries or raspberries, too. Simply swap them for the blueberries and follow instructions as written.
