My neighbor has her kids pop into my house after school, so I can keep an eye on them, and I always have a little plate of my Almond Energy Bites on deck for them to snack on.
This recipe is perfect for both adults and kids though. I also have one or two if I don’t have time to make a big breakfast, or I need a boost of energy after a workout.
Energy bites are a pretty popular health-food snack nowadays, but I love that this recipe doesn’t call for any strange or expensive ingredients. You can get them all in a baking aisle!
Ingredients:
1 cup raw sunflower seeds
1/2 cup raw almonds
1/4 cup maple syrup
1/3 cup dates
3 tablespoons raw cacao powder
1/2 teaspoon Ceylon cinnamon
1/4 teaspoon sea salt
1 teaspoon vanilla extract
Instructions:
Process all ingredients in a food processor until combined. Roll into small walnut-sized balls. Store in refrigerator in a tightly-covered container.
