Why make the same old boring chicken casserole One. More. Time? Aaaarrrrgggghhhh! Don’t you get tired of the same-old, same-old, week after week, month after month? I know that I do. That’s why I am always hounding the internet and all my favorite food bloggers to come up with new and interesting recipes to share with you.

This top notch recipe, for Baked Chicken and Potato Casserole, from Bee (one of my favorite food bloggers) allows you to relax and put a tasty meal on the table in no time at all, and with minimum effort. Plus it has something that most chicken casserole recipes do not:  POTATOES! It seems that the spud has fallen out of favor in our national quest to be uber-thin by grazing on salads and kale. Gack! If I have to look at even one more leaf of kale in my lifetime, it will be far too soon for my preferences!

Don’t get me wrong, I love salads! All types of salads from fluffy fruit-and-cream concoctions that are really more like desserts than salads, through your standard side salad, then salads with grains and salads with meat. But every now and again I long for the good old days, when potatoes were as much a part of every meal as salads are today.

Quick Tip:  If you don’t like Canadian bacon, or can’t locate any in your local market, you can substitute 1-2 strips of regular bacon, cooked crispy.
