There’s Nothing Better Than Bacon And Cheddar!

My coworkers and I all take turns making different breakfasts for each other throughout the week. We all pick a week of the day, written on a piece of paper, from a hat. Unfortunately, I sometimes get stuck with the dreaded Monday, or, even worse, Wednesday – ugh!

On the days of the week, where I know I’m going to feel tired or sluggish, I like to make these Bacon Cheddar Breakfast Muffins. Funny enough, even though they’re so easy to make, this is actually one of the favorite breakfasts of all my coworkers!

I make the muffins from scratch. That’s right – no box mix for me! I swear, even though I make these Bacon Cheddar Breakfast Muffins from start to finish, the batter is very easy to make. I think that’s why they’re so popular too.

The bacon adds the perfect saltiness to each bite, but the gooey cheddar cheese keeps the muffin a little moist too. I always suggest microwaving your muffin for five to ten seconds before eating. A warm, savory muffin is the perfect way to start your day, no matter if it’s Monday, Wednesday, or any other day! I would even suggest making these for quick Sunday breakfasts, so you’re spending less time in the kitchen on your days off.
