Macaroni and Cheese Goes Portable With This Quick Twist
I’m a sucker for anything cooked in a muffin tin. From muffins to egg cups, I just think they are so adorable with their tiny little handheld shape. But when I saw this recipe come up on my Pinterest feed, I thought surely there is no way that mac and cheese is going to stay together like a muffin. Wouldn’t it just fall apart like…well, mac and cheese? But as it turns out, baking mac and cheese together in a muffin tin results in these adorable, portable bites of cheesy pasta that is out of this world.
If you’ve ever wanted to take mac and cheese to work without needing a giant bowl to transport it, you’re in luck. These are also perfect for controlling portion sizes at dinner, and for convincing kids to eat all their food. If you prefer your mac and cheese with some crunchy edges to it, this recipe will be your new favorite. Every bite has that little bit of crispness around the edge, with creamy pasta in the center. Big thanks to Chocolate Covered Katie for this recipe. It’s no harder than making standard mac and cheese, and takes about the same amount of time – so it’s perfect for adding to the dinner rotation.

Quick tip: It’s easy to make this recipe vegan. Swap the milk for a milk replacement of your choice, the parmesan for nutritional yeast, the cheese for a vegan substitute, and the butter for a margarine spread.
