Don’t Worry, Be Crabby!
This recipe is both quick and easy to prepare. The resulting crab melts are delicious, and could be enjoyed as a light lunch, for brunch, or for dinner with a side salad or bowl of soup (chilled soup in warmer weather, of course). This recipe is perfect for those hot days of summer, when you don’t want your oven on for long periods of time, heating up your kitchen.
You could also serve this as an appetizer by cutting the French bread version into small squares. Or you could make tiny versions of the crab melts by making them on hearty shredded wheat crackers that guests could easily eat while they mingle and talk.
For an interesting variation, you could serve it on a thick slice of fruit, such as apple or pear. These would not fully cook for the brief time they were under the broiler or in your oven to melt the cheese. The combination of the fruit with the crab meat would be unexpectedly refreshing.
This combination of crab meat, crunchy veggies and a bit of Dijon mustard for flavor, bound together with sour cream (or its slightly less sour cousin, crème fraiche), and topped with gooey melted cheese is sure to please family and guests, alike.
