The Perfect Family Weekday Meal

Do you love pasta? What about Mexican food? And are you (like me) a huge fan of anything made in a crock pot? If you said yes to all of those questions, then I have the most amazing recipe for you- Chicken Fajita Crockpot Pasta. Yes it may sound a little crazy but just wait, you are going to love it.

Pull out that old reliable crock pot and you are going to fill it with Mexican Fajita inspires spices, cream of mushroom soup (a crock pot classic), some diced tomatoes and chicken. Now is the part where your house begins to smell delicious as your mix cooks for 4 hours. After chopping up the chicken nice and small, the pasta is added to the crock pot and cooked in chicken broth and topped with cheese (no pasta or fajita is complete without a nice pile of cheese right?).

And there you have it, a super easy meal that combines your love for Mexican food with the simplicity of cooking in a crock pot. Oh and don’t forget about the pasta- everyone loves pasta! This meal really does have something for everyone…

Quick tip: Try using a different shaped pasta like Ziti for a more kid friendly version.
