Super Easy To Make, Your Kids Can Do It

Some college girlfriends and I who still live near each other all get together for a game of dominos once a month. It’s our girls night out away from the kids and our husbands so we can catch up and have a little fun. We take turns hosting it each month and the host prepares some snacks and a light dinner to eat while we play.

Molly hosted a few months ago and introduced us to this delicious tex mex pasta salad. It was creamy and had all of your favorite fiesta flavors with the avocado, corn, black beans and tomato! My favorite part of the whole dish was the dressing – I use that now on my taco salads because it was so delicious. The creaminess of the sour cream (what I use for the kids) and the spices with that hint of lime are light and refreshing.

It’s really easy to make – you just toss everything together, throw a lid on it and call it a day! For a heathier spin, I like to substitute the pasta for lettuce and create a cream tex mex salad. Throw on some grilled chicken (bonus when you marinate it with the dressing recipe) and it’s a full meal.
