Make A Savory Batch Of This Sought-After Soup To Keep You Warm In Chilly Weather

I don’t know about you, but my ancestors must have been masters of soup-making. My great-grandmother had recipes for every kind of soup imaginable, and soup was one of her favorite things to make. Times were hard when she was a young bride, and she had to make do with what they could afford. Sarah’s fabulous slow cooker potato soup recipe brought back a flood of fond memories.

One of the keys to this thrifty soup-making habit, necessary for survival when raising two young children during the Great Depression, was her ability to save leftovers and create delicious soups using every little thing. As I got a little bit older, her refrigerator became like a treasure trove to me. It was full of foil packets and little dishes of this and that. If there were 3 peas leftover from dinner, she would lovingly wrap these in foil and put them in her fridge or freezer using some arcane cataloging system.

She would get a little frustrated with my little girl self when she would send me to find those 3 peas and I started unwrapping little foil packets, one-by-one. She would say something like, “They are right there next to the roast beef!”

Quick Tip:  This soup is meant to be thin, it is not a stew. If you would like it to be thicker, you could add some cream cheese that you have put in a blender with a little of the soup. Blend until creamy and then stir it back into the soup at the end, right before serving.
