Vegetables Have Never Tasted As Good As This Side Dish
Okay, I’m about to throw at you a little food-history lesson. I don’t think that Cauliflower Cheese exists as a comfort food staple outside of Europe, but it absolutely should! That’s why I gladly post this recipe here.
My family is from the UK, and this Cheesy Cauliflower dish was always one of my favorite vegetable sides to eat as a kid. In fact, I used to request it specifically to eat as a meal by itself for lunch or dinner (sometimes my mom let that slide).
I must tell you that this brilliant way I have of preparing the cauliflower so that it both retains bite and stops the sauce from becoming watery or too thin is borrowed from a famous chef I know. So, just know you’re getting some professional level advice here!
I most commonly make this with Red Leicester cheese, but I’m guessing you’ll have a hard time finding that in your grocery store! A sharp cheddar cheese works just as well for this side dish. Feel free to use any combination of sharp cheeses that you like!
Also, if you want a truly golden brown top – as I have a weakness for – throw this dish under the broiler for a few minutes at the end.
