We Suggest This For A Perfect Lazy Sunday Supper

A few short months ago we were in the dead of winter, everything was covered in snow, and motivation to do much more than toss a pizza in the oven for supper was hard to come by. I’m not sure what it is but when it’s cold outside all I want to do is curl up with a book, a blanket and steaming hot cup of coffee.

Please tell me I’m not alone in this??

Anyway, one particularly chilly weekend where we were all buy snowed in my husband and I decided that we needed to change up our routine and get a little more creative in the kitchen. So we tossed our blankets aside, put our mugs down and got to scrounging through our pantry and fridge to see what we could come up with.

At first, things didn’t look to promising. We didn’t have our usual stock pile of fresh produce and meats that sustains us through most of the year. But a bag of underused potatoes caught my eye. I grabbed my phone and a quick search soon gave me dozens of ideas to choose from. After debating back and forth for a while we finally settled on this one. And it was a winner!

Quick tip: You can make this in your crock pot—add the layers like the recipe calls for and cook on high for 4-5 hours. (Add cooked bacon at the end so it stays crispy.)

    Looks great, does the chicken need to be cooked first and then added?

      Hi Renita, no need to cook the chicken breasts first, just dice them and add into the casserole as instructed. 🙂
