Ingredients (mix up order)
1 can Rotel tomatoes (10oz)
1 pound ground beef
2 cups chicken broth
2 medium sized russet potatoes
8 ounces American cheese or Velveeta, cubed
Toppings to serve
Directions
In soup pot, brown ground beef, drain and set aside.
Add Rotel and chicken stock to pot and bring to a simmer. Add potatoes and cook covered, about ten minutes, until potatoes are done (check by piercing with a fork).
Reincorporate ground beef and add cheese. Stir over medium/low heat until everything is incorporated and heated through.
Garnish with desired toppings and serve.

Why do you use chicken broth? I would use beef broth.
I’d use beef broth, add onions and bacon or even do a bacon Swiss suit with caramelized onion
