These cookies are like little bits of lemon heaven! And they are so easy! The secret is you make them with a lemon cake mix, so all the hard work is done for you. The dough is literally three ingredients: the mix, eggs and oil.
After getting a healthy dunk in powdered sugar, you pop the cookies in the oven to bake and try your best to wait patiently until they’re done. I love these straight out of the oven when they’re warm and practically melt in your mouth—so delicious! If you even like lemon just a tiny bit you have to make these.
Ingredients:
1 (15.25 ounce) box Lemon Cake Mix
2 eggs
1/3 cup vegetable oil
1/3 cup powdered sugar
Directions:
In a bowl, mix together the cake mix, eggs and oil. Put the powdered sugar into a small bow. Drop spoonfuls of dough into the powdered sugar mixture, roll it around and form into a ball. Place on the cookie sheet and bake for about 6 minutes, watching closely and removing when the edges just begin to brown.
Leave cookies on cookie sheet for about 5 minutes, before transferring to a wire cooling rack.
