Call Me Crazy – But I Make This Breakfast Casserole Every Christmas Morning!

I make this meaty breakfast casserole every Christmas morning for breakfast for one big reason: it’s so easy to make that it gives me the opportunity to send more time with family. All I have to do is combine the ingredients ahead of time the night before and toss it in the fridge.

The next morning, I can throw it in the oven and walk away while I watch my kids open their presents! Sometime I use bacon instead of sausage, and sometimes I use a blend of different cheeses to play around with the flavors and keep things interesting.

 

Ingredients:

6 eggs

2 cups milk

1 teaspoon mustard

1 teaspoon salt

1 pound breakfast sausage, cooked and drained

6 slices of white bread, cubed

1 cup of cheddar cheese, grated

 

Instructions:

Cook and drain sausage, set aside. In a large bowl, beat eggs, add the milk, salt and mustard. Stir in the bread cubes, cheese and sausage.

Pour into a greased baking pan (11×7) Cover and place in fridge for 8 hours or overnight.

Remove from fridge 30 minutes before baking.

Bake uncovered at 350 degrees for 40 minutes of until knife inserted comes out clean.
