When I first saw this recipe, the picture attracted me. Why, those cooked carrots actually looked good! As I read over the ingredients and the instructions, it seemed like it was just too simple – why hadn’t I ever thought of putting cheese on cooked carrots. Everything is better with cheese, right?
This recipe is super easy and quick. From start-to-finish, including prep and cook times, I can easily get these on my table in 30 minutes. I like eating them by themselves, but they would go great with any type of meat or fish. With their whole carrot presentation, I think they would be an elegant addition to my next dinner party, too.
INGREDIENTS
8-10 carrots peeled
2 Tbsp. butter melted
2 tsp garlic minced
4 Tbsp. Parmesan Cheese (see Quick Tip)
1 tsp chopped parsley
INSTRUCTIONS
Preheat oven to 400 degrees F.
Mix melted butter and garlic together.
Place carrots on a parchment paper lined baking sheet.
Drizzle with butter/garlic mixture.
Roast in oven for 15 minutes.
Shake pan occasionally to rotate carrots.
Top with cheese and roast for another 10 minutes or until carrots reach desired doneness.
Top with parsley and serve immediately

Quick Tip: If you cannot find freshly grated (the kind with big flakes of cheese) or shredded Parmesan cheese, you could use that old standby grated Parmesan cheese in the shaker container. The results will not be nearly as good, so do try to find the fresh Parmesan cheese, if possible.
