I’m pretty sure all parents can agree that having an extra hour every morning—without having to get up an hour earlier—would be an absolute life saver. Between getting ourselves ready, prepping lunches, finally getting sleepy kids out of bed and who knows what else we need to do it seems that the last thing we have time for is a nice hot breakfast.

In my family granola bars and cereal are the most common breakfast we can get together for our kids before we run out the door, and my husband and I often just start our morning with a cup of coffee and not much else. I’m always so envious of the morning routines of families on TV—sit down breakfasts full of nutritious and delicious foods like eggs, fruits and veggies. If only that was real life!

I was discussing this same thing with my good friend the other day and we both agreed that there had to be a better way to get our families a breakfast that would actually give them energy to get to lunch without needing to get up hours before the sun comes up to do it.

So to say  I was happy when I stumbled across this recipe would be an understatement.

Quick tip: Add some extra nutrition by adding some veggies (we like bell peppers and onions or spinach) to your sandwiches before freezing. Cooked or fresh work well.
