Anyone else dream of just eating a bowl of ooey gooey melted cheese? No? Okay, that might just be me, but trust me when I saw this beer cheese dip may just be the best dip you ever eat! It is amazingly rich and flavorful thanks to cheddar (the sharper the better), your favorite beer, and a few extra seasonings like mustard and hot sauce.
Any time you serve this it’s guaranteed to be a hit. In fact, it’s usually the first thing to go at any party so be ready to share the recipe. It’s simple yet over the top tasty. The best kind of recipe.
Ingredients
2 tbsp unsalted butter
3 tbsp flour
½ cup milk
¾ lager or ale
1 tsp dry mustard
2 tsp Worcestershire sauce
Hot sauce to taste
3 cups grated sharp cheddar cheese
Kosher salt
Black pepper
Instructions
Over medium heat in a saucepan melt the butter. Add the flour and cook (stir constantly) for two minutes.
Slowly whisk in the milk and beer, increase the heat to medium high and bring the mixture to a simmer.
Add the mustard, Worcestershire, and hot sauce and cook, whisking occasionally, until it thickens—about 5 minutes.
Add the cheese in batches—whisking to melt each batch until adding another—until all is added. Season with salt and pepper.
Serve with toast points, pita chips, veggies or more for dipping.
