When Life Gives You Overripe Bananas, Make A Cake!

For every birthday in my house (except mine of course), I make a layered, fruity cake. My kids like it, and it gives me an excuse to make cake! We eat about half of it, and I take the rest to work.

For my hubby’s birthday, I made a Chocolate Banana Layer Cake! I couldn’t find the exact recipe I wanted on the internet, so I had to make my own. I was originally looking for a layer cake that had alternating chocolate and banana layers with chocolate frosting.

I came across recipes which had fresh banana in the layers, but, I wanted something that would sit well in the car so I could take the leftovers to work. Anyways, I did find this recipe called the “Best Ever Banana Cake with Cream Cheese Frosting.” With a title like that, how could I not try it, right?

I modified the recipe a little (way less sugar, no salt, and no lemon juice – this is a chocolate cake, people), baked it in cake pans and used a chocolate frosting instead. The end result was pretty good! I’m a big fan of chocolate and banana combined together, so this was right up my alley. Check it out!
