Looking For a Fun, Easy-To-Prepare Summertime Dessert?

What would summer be without watermelon? On a hot and steamy summer’s day, few things taste as sweetly refreshing as a big slice of ice-cold watermelon.

Personally, I have never been a great fan of watermelon. I don’t really like food you have to fuss with, and removing those seeds is pretty fussy and frustrating work. I have never felt it was worth the bother, just to eat this bland-tasting fruit.

Then one summer, a friend shared a watermelon with me that she had grown on her farm. She must have fed it special watermelon food from the time it was just a little seed. I’m sure she sang it to sleep each night with watermelon lullabies she wrote just for it. Maybe she even carried it around with her, everywhere she went, the way some people always have their little Chihuahuas peeking out of their purses.

Whatever she did, that watermelon had the most delicious flavor when she presented it to me as a gift. I almost turned it down, telling her I didn’t really care for the taste of watermelon. As it turns out, I do like watermelon! I had just never had a good one, until that day.

Quick Tip:  In order to get nice, uniform slices to compose your watermelon pizza upon, use a very large, very sharp knife to slice your watermelon. This is no job for a paring knife!
